The Newari people of Nepal’s Kathmandu Valley have cultivated one of the subcontinent’s most distinct culinary traditions — shaped by altitude, agriculture, religious ceremony, and centuries of trade route influence.
The Core Ingredients
Newari cuisine is built around beaten rice (chiura), black lentils (bhatmas), fermented vegetables (achar), and buffalo meat (chhwela). Our chef sources these from traditional Dhulikhel farms within 20km of the resort.
Every Thursday evening our Newari Heritage Feast is served in the courtyard — a 12-dish ceremonial meal that is as much cultural experience as culinary one. Pre-booking essential. Seats limited to 20 guests.
